The average age of fruit here is 10-12 years considerably older than most Finos. A bit like the grower-Champagne movement in France, the best producers in Jerez are seeking healthy, ripe fruit as opposed to sub-par, often under-ripe fruit that many others settle for. The quality here is clear – there is a primary fruit character that is so ripe and so pure that it shines through in the glass, even above all of the character that is derived from winemaking and aging that comes with Sherry. Salty, chalky, flavours of dough and tidal pool, it’s intensely flavoured but light in the mouth. Amazing fino.
