There was an acute note of freshly cracked black peppercorns in the nose of the 2019 Polígonos San Pablo Cabernet Franc, which matured in foudre. They use oak for Cabernet Franc, which they feel needs more oxygen than the Malbec, which matures in concrete. The grape is very transparent to the place, despite being a very aromatic and recognizable variety. It has a very fine thread, refined tannins and a lack of fruit, with dry flowers. This is from a place where they struggle to ripen the variety, and the wine is always sharp.
