Merlot and Syrah from Mounts Bench vineyard. Hand picked into small bins, 80% destemmed with a 2 week maceration. Then put into barrel for 2 years, elevage on the fine lees (neutral barrel, of course). The wine is never racked. Bottled with 30parts sulfur. This was tested a few years back and it had under 4 parts total! This is a great example to prove that natural wines can stand the test of time!
