Tentaka Organic Junmaï is made from a combination of locally-grown organic Gohyakumangoku and Asahino Yume rice. Particular care is taken at every stage of the production process, the Tentaka brewery's aim being to express the fabulous potential of these beautiful rices to the full. The result is a sake with a surprisingly spicy nose, punctuated by lactic, fresh and woody notes. Deep and lively on the palate, the quality of the rice expresses itself magnificently with a slightly acidic sweetness. Sweet, deep aromas of chestnut and cereal are revealed. Drier on the finish, Tentaka Junmaï retains a rich base and plenty of freshness.
