Theo Coles makes insanely pure 'pre-technology' wines from small chemical-free vineyards in North Canterbury, New Zealand. The fruit for his 2020 Skin Fermented Sauvignon Blanc is sourced from two organic vineyards, both grown on gravel soils, which is then destemmed and fermented with native yeast on skins for six weeks. The wine is then pressed off the skins and aged for eight months in a variety of stainless steel tanks and Spanish amphora (Tinajas). Bottled unfined, unfiltered, and with minimal sulphur. Herbaceous and saline with juicy yellow plums. Not your average Savvy B!
