While Gualtallary's calcareous soils provide nerve and tannic tension, El Peral adds red fruits and silkiness from its vineyards more than 1,000 meters up. The blend is produced with 50% whole bunches crushed in cement tanks. Aging lasted for 15 months, and the result is a wine that combines a structure of acidity and firm tannins that don't yield to any sweetness with red fruits and mineral tones.
