IWA Sake, founded by Richard Geoffroy, the former Chef de Cave of Dom Pérignon for 28 years, represents the pinnacle of sake craftsmanship. Geoffroy envisioned and created IWA Sake to transcend traditional boundaries, offering a versatile pairing experience with fine cuisines from around the world, not just Japanese cuisine.
To achieve the exceptional balance and harmony that defines IWA Sake, over twenty different junmai daiginjo sakes are meticulously blended each year. These sakes are crafted using three distinct rice varieties from four different terroirs and five unique yeast strains. The result is IWA Sake's 'Assemblage,' a sake matured in the bottle for over a year. This aging process allows IWA Sake to develop rich, yet weightless characteristics that continue to evolve and gain complexity over time, offering a refined equilibrium between nose and palate.
