The 2023 La Servil is 95% Monastrell from Calderonzillo, Fuente-Álamo, Jumilla and was aged 20 months in foudres. Like a breeze through the pine woods, it evokes wild herbs, thyme and dried flowers. It is dry, with chalky tannins and a fine line of freshness, balancing agility and tension despite its 14.5% alcohol. Delicate in flavor, the finish lingers on herbs and dried flowers.
