Made using the Pecorino, a grape widely planted in central Italy, this example is grown organically and biodynamically with the utmost respect for nature. The grapes are fermented with indigenous yeasts it remains in tank for 30 days on lees to build complexity. The result is an intense nose with hints of acacia, white fruits while the palate is fresh, intense, fruity and full-bodied.
