Despite locals warning against wasting time on Petit Chablis, Clotilde recognized the Kimmeridgian terroir's potential, akin to Chablis. Her unconventional approach extends to her winemaking practices, where she employs natural methods, avoids chemicals, and favors hand-harvesting. Clotilde's domain, assembled parcel by parcel, includes vineyards in Chablis, Cote d'Auxerre, St. Bris – les Vignes, and Petit Chablis, with prized holdings like the nearly 100-year-old sauvignon blanc vines in St. Bris. Her commitment to quality and complexity is evident in her decision to undergo malolactic fermentation for all her wines, including those sourced from prémier and grand cru vineyards in Chablis, cultivated according to her exacting specifications.
