Daniel-Etienne Defaix, the 14th generation in his family's winemaking tradition, established his domaine in Chablis. In 1978, at the age of 18, he acquired the Le Lys vineyard, adjacent to his father's land, with a bank mortgage, marking the start of his winemaking journey. His 28-hectare domaine, primarily planted with Chardonnay in 1er Cru vineyard sites, follows a consistent winemaking approach. Grapes are gently pressed, fermented naturally, and aged on lees in stainless steel tanks for at least 18 months. The wines are not oaked and are not fined or filtered before bottling. Defaix releases his wines only after several years of bottle aging, allowing the unique Chablis terroir to shine. The domaine's commitment to high-quality corks secures cork stability and maintains the wines' excellence.
