A single-vineyard premier cru Chablis from a three-generation family domaine in the village of Fleys. Charly Nicolle has been quietly taking over the family vineyards since 1997, farming his own domaine alongside his father's (Domaine de la Mandelière) and his grandfather Paul's.
'Les Fourneaux' — "the ovens" — is aptly named for one of the warmest microclimates in all of Chablis, an east-facing premier cru whose vineyards lie entirely within the village of Fleys. The wine ferments and ages 12–18 months on its lees, 80% in stainless steel and 20% in 400-liter demi-muids, then blends together before bottling. In good vintages, no sulfur is added at bottling.
The result is a classic, generous Chablis: straw-gold, with a floral bouquet, notes of almond and honey, and a palate that is tender and abundant yet well-framed by that signature Chablis mineral cut and a clean, saline finish. 100% Chardonnay. Drink now through 2030.
