The 2022 Jean et Sébastien Dauvissat Vaillons Vieilles Vignes is old-vine Chablis Premier Cru from a family working these Burgundy vineyards since 1899. This Chablis is drawn from a small parcel in the Vaillons climat planted to Chardonnay vines over 70 years old—low yields and deep roots that deliver rare concentration.
Unlike Dauvissat's steel-raised Chablis, this Premier Cru is partially barrel-fermented with around 25% new oak, giving the wine a creamy, layered texture while preserving the cut and tension that define great Chablis.
Tasting Notes: Pale gold with green glints. Aromas of citrus confit, lemon zest, poached pear, and white acacia blossom lead into classic Chablis salinity—oyster shell, iodine, and wet stone. The palate is full-bodied yet vibrant, with chalky Kimmeridgian minerality driving a long, saline finish.
