Dehesa de los Canónigos: Classic Ribera del Duero from Pesquera

Bodega Dehesa de los Canónigos is a family estate in Pesquera de Duero, in the heart of Ribera del Duero. Its name, "the pasture of the canons", recalls the estate's history: for centuries the land belonged to the canons of the Cathedral of Valladolid. Today the family grows Tinto Fino (Ribera's Tempranillo) with a little Cabernet Sauvignon, plus the rare white grape Albillo Mayor, and makes classic, age-worthy Ribera with real structure and polish.

The Wines of Dehesa de los Canónigos

    • Crianza: The estate's best-known wine. Blackberry, cherry and plum with licorice, forest floor, tobacco and hints of cedar and nutmeg. Ripe, polished tannins and a long, structured finish.
    • Reserva and Solideo: Longer-aged reds with deeper fruit and more complex oak, vanilla and spice. Solideo is the estate's top Reserva.
    • Albillo Mayor: A rare white from Ribera's traditional white grape. Yellow apple, white blossoms, lemon and star anise on a silky palate with citrus and mineral notes.

Pesquera de Duero and the Heart of Ribera

Pesquera de Duero sits on the stretch of the Duero River between Pesquera and Peñafiel that is home to many of Ribera's most famous estates. The vineyards lie at high altitude, around 750 to 850 meters, with hot days, very cold nights and a short growing season. That extreme climate gives Tinto Fino its deep color, firm tannins and fresh acidity, the hallmarks of great Ribera del Duero.

    Food Pairing and Serving

Dehesa de los Canónigos reds are made for roast lamb, the classic dish of Castilla, as well as grilled steak, game and hard cheeses such as aged Manchego. Serve at 60 to 65°F and decant younger vintages for 30 to 60 minutes. The Albillo Mayor is excellent with roast chicken, pork and rich fish dishes.
