Each grape (Sauvignon Blanc) is sorted upon receipt of the harvest, we work by gravity in order to respect the natural winemaking circuit. Light pressing to preserve optimal fruitiness. Blend of 50% limestone, 30% clay-limestone and 20% flint. Each soil is vinified separately in thermo-regulated stainless steel vats, the limestone brings minerality and finesse; the clay-limestone brings fruit, richness and the flint brings structure and minerality.
