The 2011 vintage Domaine De Fontbonau red wine is produced from hand-picked grapes, sorted in the vineyard and cellar. A 3-day cold pre-fermentation maceration is followed by alcoholic fermentation with little extraction and a long vatting period. Pressing is gentle, and the pressed grapes are reintegrated into the free-run wines based on tastings. Malolactic fermentation takes place in barrels or temperature-controlled stainless steel vats. This wine is distinguished by its clear red color, depth, and delicacy. It exudes magnificent aromatic power with a rounded, spicy finish.
