El Maestro Sierra was founded in 1830 by José Antonio Sierra, the master cooper who built barrels for Jerez's noble houses before deciding he could fill them better himself — the fox hunt on the label winks at the establishment that tried to stop him. Today the bodega guards some of the oldest and most undisturbed soleras in Jerez, run by Carmen Borrego Pla with cellar master Ana Cabestrero. This Oloroso is drawn from a solera averaging 15 years: Palomino aged oxidatively in American oak, without flor, emerging dark mahogany in the glass with toasted hazelnut, walnut and exotic spice over a richly textured, bone-dry palate. Serve at cellar temperature alongside aged cheeses, toasted nuts, or game.
