The 2021 El Muelle de Olaso is pure Palomino and the sharpest and most pungent of the three vintages that I tasted, but it feels a little too young and should calm down with a few more months in bottle, as it's a bit too fruity now. Because it has depth and mineral complexity, it's sharp and austere. The finish has a note of iodine and salt with a balsamic twist of bay leaf. This should develop nicely.
