Clotilde Davenne is a celebrated independent Chablis winemaker (since 1989, formerly Brocard's chief oenologist), farming naturally and vinifying in steel for purity. Her Aligoté — Burgundy's zesty "other" white grape — comes from Saint-Bris in the Yonne: bright, saline and mouthwatering, the classic base for a kir and a joy on its own.
