Before founding her own domaine, Clotilde Davenne spent sixteen vintages as chief oenologist for Jean-Marc Brocard — one of the defining cellars of modern Chablis. In 2005 she struck out on her own from the village of Préhy, at the southern edge of the Chablis appellation, where she now farms some 30 hectares across Chablis, Saint-Bris, Irancy and the Côtes d'Auxerre.
This Bourgogne Blanc is pure Chardonnay from the limestone vineyard at her doorstep, planted in the 1970s — vines that would read as Chablis on any map but carry the regional appellation. Her method is purity itself: hand harvest, native yeasts, stainless steel only, and extended aging on fine lees to build texture without a splinter of oak.
