Saint-Bris is the only appellation in Burgundy planted to Sauvignon Blanc, and Clotilde Davenne — a celebrated independent Chablis winemaker — farms a parcel of it near Chablis on Kimmeridgian limestone. Steel-fermented for purity, it's a distinctive, mineral take on Sauvignon: aromatic like the Loire but with Burgundian chalk underneath.
