Domaine du Cellier aux Moines Givry 1er Cru Clos du Cellier aux Moines Les Dessus

Les Dessus is the top red of Domaine du Cellier aux Moines: a parcel selection of Pinot Noir from the highest, most limestone-rich part of the historic Clos du Cellier aux Moines, a Premier Cru in Givry first planted by Cistercian monks in the twelfth century. The parcel yields only a few barrels, and the wine is bottled unfined and unfiltered. It is one of the most serious red Burgundies made in the Côte Chalonnaise.

Tasting Notes

Dark-toned black cherry and mulberry, with savory spice, violets, crushed petals and a burst of limestone minerality. The palate is concentrated yet medium bodied, with superfine, closely knit tannins and chalky acidity leading to a long, mineral finish. Reserved and structured, it is built for the cellar and will reward patience.

About Domaine du Cellier aux Moines

The Cellier aux Moines, the monks' cellar, was founded around 1130 in Givry by Cistercian monks from the Abbey of La Ferté, who created one of the first walled vineyards in Burgundy. Philippe and Catherine Pascal bought and restored the estate in 2004, and the wines are made by Guillaume Marko in a gravity-fed winery. The domaine was the first in Givry to farm organically and is certified biodynamic by Biodyvin.

How to Serve and Food Pairing

Decant 30 to 60 minutes and serve at 60 to 64°F. Pair with roast duck, squab, game birds, beef tenderloin and wild mushrooms.
