En Chevret is a Premier Cru red Burgundy from Volnay, the Côte de Beaune village known for perfumed, elegant Pinot Noir. Made by Domaine du Cellier aux Moines from biodynamically farmed grapes, it brings the precision of this historic Givry estate to one of the most refined appellations in the Côte d'Or.

Tasting Notes

Racy, savory aromas of red and dark berries, citrus peel, dried herbs and subtle sweet spice. The palate is medium bodied, with firm, fine-grained tannins, delicate red berry flavors and a long, scented finish. Give it a few years in the cellar to open fully.

About Domaine du Cellier aux Moines

The Cellier aux Moines, the monks' cellar, was founded around 1130 in Givry by Cistercian monks from the Abbey of La Ferté. Philippe and Catherine Pascal bought and restored the estate in 2004, and alongside the historic Clos in Givry the domaine now farms a handful of Premier Cru parcels in the Côte de Beaune. The wines are made by Guillaume Marko in a gravity-fed winery, and the domaine is certified biodynamic by Biodyvin.

How to Serve and Food Pairing

Decant about 30 minutes and serve at 60 to 64°F. Pair with roast chicken, duck breast, veal, wild mushroom risotto and soft washed-rind cheeses.
