Ignios Orígenes Listán Negro Vendimia Seleccionada, Ycoden-Daute-Isora, Spain | 2021 | 750ml
Tasting Notes
The 2021 pours a bright ruby and opens with an expressive, volcanic nose: dried rose petals, cherry, bay leaf and sweet spice, threaded with smoke and the ashy, mineral scent of wet pumice. The palate is medium bodied and gentle, with fine, round tannins, red fruit in the pomegranate and red currant register, a touch of bitter orange and a saline finish.
About This Wine
Ignios Orígenes is the project of Borja Pérez, one of the winemakers behind the revival of Tenerife wine. Since 2011 he has made small single vineyard bottlings from old vines on the island's northwest coast.
This Vendimia Seleccionada comes from Listán Negro vines more than 50 years old, planted at around 400 meters on volcanic soils with red clay in the Ycoden-Daute-Isora area, a site shaped by the Atlantic trade winds. The grapes are fermented as whole clusters in concrete with a maceration of about 30 days, then aged for a year in a single 1,500 liter oak foudre. Production runs to fewer than 2,000 bottles.
Food Pairing
Serve with roast lamb, grilled pork or charcuterie.
