A cult-bottled Amontillado from a great old Jerez bodega — selected with a legend of Sherry, ~15 years of flor and oxidative age.
This Amontillado is a project of Nicolas Palazzi (PM Spirits), blended and bottled with Eduardo Ojeda — for decades chief winemaker at Valdespino and La Guita, co-owner of the cult bottler Equipo Navazos. It's drawn from criaderas at a highly respected bodega with roots in the late 1800s: fortified to 15%, aged 8–10 years under flor, then several more years oxidatively — averaging around fifteen years old. Palomino, from Jerez.

Roasted almond, walnut skin and dried orchard fruit over a saline, briny core with a bright, flor-lifted freshness and a long, dry, savory finish. Translation: a bone-dry, nutty Amontillado — toasted nuts and dried fruit over a saline, savory depth, unusually bright and lively for the style. Serious, complex, and endlessly food-friendly.
