Sophie is a classy white wine made from Chardonnay (94%), Viognier (4%) and Sauvignon Blanc (2%) grapes. Spontaneous fermentation takes place in wooden barrels and the wine then matures for nine months in contact with the yeast. Sophie has a bright yellow color, the aroma is dominated by tones of yellow fruit, citrus and acacia flower. The taste of the wine is beautifully structured, fuller and sleeker, with a beautiful mineral finish.
