A blend of 90% Pinot Nero and 10% Nerello Mascalese from high elevation vineyards on the northwest side of Mt. Etna. The grapes are softly pressed for one hour, allowing for a gentle extraction, before undergoing a temperature controlled fermentation and aging on the fine lees. A style modeled after Champagne production, this wine is aged for 36 months on its fine lees in bottle and hand disgorged, resulting in an absolutely extraordinary product. Lively, tightly woven bubbles bead up through the pale pink wine in conjunction with aromas of hibiscus flower, rose petal, cranberry and a freshness akin to a deep breath of mountain air. Linear and sharply mineral accented on the palate, red berries precede balanced florality, salted watermelon and notes of enlivening menfi lemon and pink grapefruit peel.
