The Jolly Chablis is fermented in stainless steel which yields a crisp and clean wine with bright acid, medium body, and lean texture. The wine is aged on its lees for seven to eight months to give some roundness to the mouthfeel. Flavors of fresh pear, apple, lime, elderflower, yeast, and minerals lead to a saline-tinged finish. Excellent with poultry, grilled seafood, or vegetarian dishes.
