Wild herbs, lemon zests and hints of kiwi introduce the 2021 Pecorino. This is pliant and round upon entry, yet it quickly gains tension through tantalizing acidity and a note of mineral-tinged sour melon. The 2021 leaves the palate nicely refreshed and reverberating with tension, as tropical florals slowly taper off. Frankly, this no-frills Pecorino is a lot of fun to taste.
